IANAL

If I fork the commit before license change, rename everything to not clash with trademarks, can I then pick commits from their repo into my still-Apache licensed forks?

EDIT: Can I use SSPL licensed software in my commercial server-side application for free?

As far as I understand it, you couldn't because the following commits would use be under the new license.

And if I remember correctly from some other similar case, picking a commit might create a new version which is then entirely under the new licence.

IANAL either though.
